Whats Happening On The Gold Coast

July

Competitors of all ages and fitness levels around the country and globe will come to the Gold Coast to sweat it out at The Gold Coast Airport Marathon on 2 July. This is one of the biggest events on Australia’s marathon calendar featuring a full marathon, half marathon, 10km run, 7.5km run and Junior Dash. Want to swing to the sounds of the 60s? Hear that funky music of the 70s? Remember why we did away with rah-rah skirts of the 80s? Then get along to The Gold Coast Arts Centre when they proudly showcase their new show Blast From The Past from 6-15 July. This musical features two solid hours of chart busting hits from artists such as Cher, Mama Cass, Elvis, Diana Ross, Neil Diamond, Barry Manilow, The Village People and many more! The Arts Centre Restaurant will even be serving up favourites of the 60’s and 70’s!

Chefs Corner

From Executive Chef – Johnny Datt

Mud Cake Wonton

1 sheet of spring roll pastry (25cm x 25cm)
1 thick slice of your favourite mud cake
(ie. from a coffee shop)
8 large strawberries
1 egg
Icing sugar

Garnish:
Double cream
2 sliced kiwifruit and 8 halved strawberries
4 springs of mint
Berry coulis

Cut spring roll pastry into 4 squares. Cut mudcake slice into four even pieces and place each piece in the middle of each pastry square. Slice strawberries and place on top of the mud cake (2 strawberries per parcel). Whisk the egg and use this to brush the edges of the pastry. Gather up the edges of the pastry and press them together to form a wonton. Place each parcel into individual sections of a lightly oiled muffin tray and bake in an oven at 180 degrees for 10-15 minutes.

When cooked dust with icing sugar. Serve on a plate with a dollop of double cream, sliced kiwifruit and strawberries, berry coulis and spring of mint.
