Barramundi Livornesa
An outstanding fish dish in a light tomato sauce with onions, olives & capers
4 barramundi fillets
450g crushed tomatoes with juices
½ cup white wine
1 cup chicken stock
12 black olives, pitted & finely diced
1 tblsp capers
1 medium onion, finely diced
¼ cup olive oil
1 chilli, chopped
2 cloves crushed garlic
1 tblsp fresh parsley, chopped
1 tblsp fresh chives, chopped
1 bay leaf
Salt & pepper
½ tsp sugar
400g chat potatoes
1 tblsp butter
Extra chopped parsley for garnish
Preheat oven to 350 degrees. Heat olive oil in large frying pan over medium heat. Add onion, chilli, garlic, olives and capers. Cook until onion is translucent. Add tomatoes and simmer for 5 minutes.
In a saucepan, reduce white wine, chicken stock and bay leaf by a quarter. Add to the tomato sauce and stir to combine all the liquid. Marinate barramundi fillets in the olive oil, parsley, chives, salt & pepper. Leave to marinate for at least 15 minutes.
Place fillets in hot pan and seal on both sides. Place fillets in the tomato broth and add sugar, salt & pepper. Place in oven and bake for 15-20 minutes.
Boil the potatoes in boiling salted water until tender. Peel and thickly slice. Heat butter in a pan and sauté the potatoes. Arrange potatoes on a plate. Place barramundi fillets on top of potatoes and spoon over sauce. Garnish with chopped parsley.
Serves four. |
