Tips from Executive Chef – Johnny Datt
Sicilian Pesto Roast
Pesto-basted beef roasted with tomatoes. This recipe has been favorably reviewed by dietitians from Diabetes Australia- NSW.
Serves: 4
Preparation Time: 5 minutes
Cooking Time: 45 minutes
Ingredients
1 Durong Country Beef topside mini roast
2 tblsp basil pesto
4 Roma (egg) tomatoes
1 tblsp olive oil
1 tblsp red wine vinegar
1 tblsp chopped basil
1 tsp brown sugar
extra basil pesto
Method
- Heat oven to 220ºC (200ºC fan forced). Cut tomatoes in half and place in an ovenproof dish. Sprinkle with combined olive oil, vinegar, basil and sugar.
- Place roast on a rack and coat with pesto. Pour a little water into pan to stop juices burning whilst cooking. Baste with pan juices throughout cooking. Add more water to pan as it evaporates. Roast tomatoes at same time.
- Test to see if roast is cooked to your liking by squeezing roast with tongs: rare feels soft, medium has a little resistance, well done feels quite firm. (To keep roast juicy, it's best not to insert a skewer when testing it.)
- Remove roast from pan and cover loosely with foil. Allow to rest so juices settle before carving (about 5-10 minutes).
- Carve roast across the grain to ensure tenderness, holding meat with tongs rather than a fork to prevent juices escaping.
- Serve with oven-roasted tomatoes, extra pesto, roast potatoes or your favourite pasta and a salad.
Tip:
Sicilian Pesto salad
Wrap leftover beef in foil and plastic wrap and refrigerate. The next day it will make a delicious pasta salad. Slice into bite-size pieces and add to cooked pasta with cherry tomatoes, chopped black olives, blanched sliced green beans and basil leaves.
