Opening on December 8, the Q1 Observation Deck invites guests to see the Gold Coast like they've never seen it before. Rising 235 meters into the sky - the highest point above the Gold Coast - the Observation Deck is located on Level 77 and 78 of the Q1 Resort and Spa. The express lift will take guests to a custom designed viewing arena to soak up the 360 degree views. They can also enjoy coffee and cake, or perhaps an evening cocktail, in the stylish Skybar Café and Lounge Bar on Level 77. On Level 78 a high definition cinema will present a history of the Gold Coast daily between 10am and 5pm. Tickets are available from the Q1 Concierge.

Caramelised baked ham with rum, ginger, lemon grass & orange

1 leg ham (easy carve)
2 cups orange juice
1 cup brown sugar
½ dark rum
¼ cup honey
2 lemon juice
2 tblsp dark soy sauce
2 tblsp crushed ginger
2 cinnamon stick
1 stick lemongrass chopped
20g cloves
Grated rind of one orange

1. Peel the skin off the ham and spike with cloves. Place in a hot oven (180 degrees).
2. Mix all other ingredients in a saucepan and bring to the boil for 10 minutes. Set aside
3. Lower the oven to 120 degrees and bake for 2 hours.
4. Baste ham very gently with mixture every 10-15 minutes until all the mixture is finished and ham is golden brown and sticky.
