Tips from Executive Chef – Johnny Datt

Spiced Blue Swimmer Crab Meat Salsa with Truffle Oil and Saffron

200 grams Crab meat
   (or 6 crabs freshly cooked)
2 teaspoon Truffle Oil
2 tablespoon Olive oil (cold pressed)
1 Chilli (chopped)
100 grams Cucumber
    (seeded and cut into strips)
½ Red Onion (cut into strips)
1 clove Garlic (crushed)
1 gram Chives (chopped)
1 gram Coriander (chopped)
1 gram Basil leaves (cut into strips)
½ teaspoon Sugar
Sea Salt & Pepper to Taste
2 Roma tomatoes
    (peeled & seeded, cut into strips)
1 Lemon juiced
1 teaspoon Fish sauce
1 French stick
1 Head of Cos Lettuce (washed)
100 grams Butter
A touch of Saffron tips

  • Take the flesh out of crabs and mix together with all ingredients
  • Place in fridge for at least 30 minutes
  • Slice the French stick into ½ inch thick pieces and pan fry in butter
  • Arrange Cos lettuce leaves around the serving plate and place the chilled salsa in the centre
  • Arrange slices of the pan fried bread around salsa
